Tom Mylan

Cass Daubenspeck October 12, 2013

Who are you? What do you do for a living?

My name is Tom Mylan. I'm a 37 year old male from southern California living in Williamsburg, Brooklyn. I'm a butcher by trade and the Executive Butcher and co-owner of the Meat Hook, a butcher shop specializing in local, sustainably raised meat. I'm also the author of the Meat Hook Meat Book that will be released by Artisan publishing in May of 2014.

Breakfast

Is coffee and, sometimes, oatmeal with maple syrup from one of our beef farms and some milk.

Shootin' Clays

My regular all-the-time hobbies are gardening, surfing at Rockaway Beach with my traditional Hawaiian wooden Paipo board, writing, cooking and working on my kooky old 1971 Raleigh DL-1 rod brake bike. The only hobby I can usually only pursue on weekends is shooting clays as all my shooting partners have regular M-F 9-5 jobs. The sporting clay stations at the Orvis center in Millbrook are an amazing way to spend a morning!

Weekly Reading

Right now I'm obsessed with this book on the development of Bell Labs. I normally read PopSci and watch YouTube cooking videos from Japan, like Cooking with Dog (his name is Francis).

On a Weekend Morning, First Thing I Do:

Get a cup of coffee and get back into bed with my wife and start to figure out what we're having for breakfast.

The Whole Weekend

Sunday is the only day off that my wife and I have together so, unlike a lot of people, our whole weekend is Sunday. We like to sleep fairly late (10 am), wake up, drink coffee and then decide to make breakfast or go out. After we've eaten we usually read or catch up on our "stories" (my wife and I have a lot of bad TV guilty pleasures like CSI: Miami and Justified) and then either head out to Chinatown or Jackson Heights for lunch and then catch a movie if there's anything good playing.

Burrito Sunday

We make a lot of breakfast burritos on Sunday morning. If it's a special occasion or we just want to treat ourselves, sometimes we'll go out to Grand Central oyster bar. No matter where you sit or what you eat there it's always magical and reasonably priced.

Besides Bad TV...

Besides watching bad TV I really enjoy watching crazy conspiracy theory stuff on YouTube. I blame Hollywood's lack of good science fiction movies for that. If they need new ideas they should just spend a few hours on the internet googling the Montauk Project or something.

Pretty Much Hungover

Honestly, on Sundays I'm given to being hungover, ordering take out (always a white pie with pepperoni and a beef patty from Tony's) and spending the day watching Point Break in my underwear, especially if it's cold and rainy outside. It doesn't happen often but in the routine of what I do, watch and eat is VERY consistent.

Ideal Week-Ender

One of my favorite ways to end the weekend is to take the L train to 3rd ave., walk down to Chinatown, eat some food, get a drink at the 169 Bar and walk back home over the bridge, stopping at our friends' restaurants along the way to say hi and maybe get a drink.
